Simple Ways to Enjoy Norfolk Honey

A good jar of Norfolk honey does not need much help. It already has natural sweetness, flavour and character. But there are plenty of simple ways to enjoy it beyond the obvious spoonful on toast.

The easiest place to start is breakfast. Honey works beautifully stirred into porridge, drizzled over yoghurt or added to granola with fruit. It brings sweetness, but also a little more depth than ordinary sugar. Because small-batch honey can vary from season to season, each jar can bring a slightly different flavour to the table.

It is also lovely on warm toast, crumpets, pancakes or waffles. Let the butter melt first, then add a small drizzle of honey over the top. Simple, but hard to beat.

For drinks, try stirring a spoonful into hot water with lemon, adding it to herbal tea or using it to sweeten a warm drink in the evening. It is a gentle way to enjoy the flavour of the honey without overpowering it.

Local honey is also brilliant with cheese. A small drizzle over a strong cheddar, soft goat’s cheese or creamy blue cheese can make a simple cheeseboard feel much more special. Add crackers, fruit and nuts, and you have an easy local produce board with very little effort.

In cooking, honey can be used in salad dressings, marinades and glazes. Mix it with mustard, oil and vinegar for a quick dressing, or use it with soy sauce, garlic or herbs for a simple glaze. It works well with roasted carrots, parsnips, sausages, chicken or halloumi.

Baking is another natural fit. Honey can be used in cakes, flapjacks, biscuits and loaves, adding sweetness and moisture. The flavour will depend on the batch, which is part of the fun when using proper small-batch honey.
