One of the best things about local Norfolk honey is that it does not taste exactly the same every time. That is not a flaw. It is part of what makes proper small-batch honey so special.

Honey is shaped by the bees, the landscape, the weather and the season. As the flowers, trees, hedgerows and crops change through the year, so does the nectar the bees bring back to the hive. That means each harvest can have its own natural colour, flavour and texture.

A spring honey may be lighter, softer and more delicate. Later in the year, the flavour might become deeper, richer or more floral, depending on what has been available to the bees. You may also notice that honey can crystallise over time. This is completely natural and does not mean the honey has gone off. Some batches crystallise more quickly than others, depending on the type of nectar collected. To soften it, simply stand the jar in warm water and let it gently loosen.
